This roasted tomato caprese salad makes for the perfect winter lunch. It is low effort, warming, and delicious. It also is (pretty much) healthy! I hope you all enjoy this as much as I do.
(makes one serving)
INGREDIENTS:
1 cup cherry/grape tomatoes (cherry tomatoes will be a little sweeter)
2 tsp dried basil
1/2 tsp pepper
1/2 tsp salt
4 cloves garlic, crushed and peeled
Drizzle of olive oil
Drizzle of balsamic glaze
Flaky sea salt
1/2 a ball mozzarella, torn into pieces
Oven-toasted bread for dipping (optional)
METHOD:
1.Pre-heat oven to 350 degrees Fahrenheit.
2. Spread tomatoes and garlic evenly on a baking sheet. Sprinkle with the basil, salt, and pepper.
3. Drizzle tomatoes and garlic with olive oil. Using your hands or a spoon, mix the tomatoes and garlic in the oil till they are all evenly covered.
4. Roast tomatoes and garlic in your pre-heated oven for 35-40 minutes until the tomatoes are shriveled and the garlic is browned.
5. Remove tomatoes from oven. Plate tomatoes with pieces of mozzarella on top, as pictured below.
6. Sprinkle with flaky sea salt and drizzle balsamic glaze on top.
7. Serve with oven-toasted bread
7. Enjoy :)
